We’ve only been eating grains, whole or otherwise, for a very, very short portion of the evolutionary life of modern humans.
That doesn't make them good for you. We're not evolved to eat grasses or seeds. I never believed this stuff till I did give them up.
The difference in my health is amazing. I wouldn't touch grains or starches again. Now, understand, please, that I'm not advocating government intervention here.
Eat what you want. But there is something to the wheat-free diets.
