I have no clue about the markets that you list. I assume you are referring to big city markets as in Manila, a city that I have never set foot in, and hope I never do.
I am referring to typical small town markets on the island of Cebu, or other Provencal islands in Visayas.
I find it a delight to do my daily shopping in my Dalaguete market. I bicycle to it most every day. Many of the vendors know me, and know what I want. It is much more fun then going to a big mall market in Cebu city.
There is a wet market section that host the meat, fish, and veggie vendors. The downstairs shops are mostly for grocery goods. The upstairs host clothing and household goods/fixtures.
Fridays are special, as the market host numerous outside vendors. One that knows me is my favorite for tools, electrical goods, and reading glasses.
Some of my vendors will go out of their way to get goods that they do not stock. For example, I wanted 3 ltr box wines. Recently, one of the girls was all excited when I came in. She had her boss buy some boxes of Franzia red wine for me when he was buying goods in the city. They promise to stock it for me.
