Love fried okra...and all other ways of cooking it, but especially fried.

Kale - Don't really care, fine in salads.
Beets - Pickled or canned.
Okra - Pickled, raw in gumbo, breaded & fried.
Brussels Sprouts - Pickled, sautéed with some bacon fat, baked with olive oil.
Cilantro - Don't care, don't NOT like it.

Pesto is traditionally basil-based, but it's gotten to be like "martinis" --- anything goes. I've seen pesto recipes with spinach, kale, and collard greens. Choose your favorite nut and cheese and voila, "pesto"!

Well, there are also exceptions to every rule. Cilantro, raw spinach and avacados are the only three green things that my son will eat and he consumes those in abundance.
His father would eat anything as long as it was fried, beige in color and covered with gravy. I like raw spinach, will not eat anything that contains cilantro or avacados - tried them once with too much scotch.
I do think that wives often have a stronger influence over a guy’s eating habits than his parents or genetics.

Had a neighborhood cookout Easter weekend. One guy always brings gumbo and this time he fixed sausage gumbo with kale. What a way to waste good sausage. Everything green made me think of slime. Couple of new neighbors who are not only Yankees but greenies to boot thought it was awesome so, being a good neighbor, I let them have my share.

To me, it depends on context. I don't care for beets on their own, but a local restaurant uses julienned beets on its house salad, as a garnish, and I like that. Same with okra - in moderation, as a thickener in Cajun dishes - it is just fine, but I might not like it front-and-center. But I like cilantro just about anywhere.

I can sort of understand a person not liking okra. I love it but only when mixed with other things like peas, or stews.
Adding okra to something like gumbo makes both the okra and gumbo taste better.

I hate fresh cilantro. It’s nasty. But, I grow it in my garden because I do like it dried. The flavor changes once it’s dried, and then it becomes usable in some mexican dishes.
Brussels sprouts...fresh only. Otherwise, they are very bitter to me, and I don’t like bitter.
Beets..love them!
Okra...depends on the cook. But I absolutely love the plant itself, and the flower it makes is beautiful!

will not eat anything that contains cilantro or avacados - tried them once with too much scotch. Now that sounds like an entertaining story! ;-)
