Houses are pretty easy to build - even without a kit. Plumbing, electric, HVAC, pretty straight forward. To do higher end fit and finish well is where lots of experience helps.
The log kits would be really interesting to look into - no experience cutting down trees and turning them into log homes so no way I’d be do that without some type of kit.
Log kits have long been “kit homes” available at any price/size/configuration you like.
