They can get air bubbles trapped in ice cores. They can date the ice cores very very accurately. So they measure the carbon dioxide in a section of ice and then date the section to get the carbon dioxide in the air from x thousand years ago. that number varies over time.

They can do some extension by overlapping tree ring records from fossil trees to that of contemporary trees. Still you’d be talking about a several hundred kilometer radius tree!
