To: Harmless Teddy Bear

You will find black pepper is better to put on a steak after it is cooked and rested. The high heat used to cook a steak can make the pepper bitter.

Yep. I never season meat before grilling.

@ Harmless Teddy Bear: your method is great for producing wonderful rare buffalo steaks, but for medium or well done, cook over medium hot and turn that sucker over and over like a human rotisserie. Don't let the juices rise up and fall into the fire.
