Have you tried beaver? I mean builds-dams-in-a-pond-beaver? The meat is tar black and tastes like wood shavings.
I have no experience at all in these matters. The only person I know who has won’t eat exotic Americana stuff. (She knows how to field-dress and prep any sort of mammal or fish.) I offered her some purple bell peppers from the garden and she doesn’t eat anything that is a color it isn’t supposed to be. I wonder how the meat gets tar black? Blood gets black when the stomach’s digestive juices act upon it before it’s excreted, but re: beavers, I have no idea. Will look it up and report back if I find anything.
