He needs guidance. There must be some objective data that supports not adding a new tax on the food that other people eat.
Same here. There used to be one 1/2 mi from me and way back they had oysters. Double yummmmmm. They dropped those but I still liked to eat there now and then.
They shut down and there's one left in the area, not worth driving to. I found a recipe for their batter on the web and got my own fish. Catfish fillets, tilapia and some cod. Wanted some scallops and oysters but the store won't have them fresh until closer to the holidays.
When I got the fish I couldn't resist some creamed herring. Long senior moment there. I like shrimp, too in my own horseradish/chili sauce. Heinz chili sauce, no chili in it, my favorite brand of that. Squeeze of lemon juice.
Anyway, I don't use a thermometer and my fat may not have been hot enough but my batter didn't get as golden brown as that picture. It fried up nice and crispy though and tasted fine. I saw another recipe with 1 tsp of sugar, didn't know if I should try that or not. I don't want beer batter though.
This was 3/4 cup flour 2 tbsp corn starch 1/4 tsp baking powder 1/4 tsp baking soda 1/4 tsp salt, 3/4 cup water. I don't deep fry anything very often. Usually I bake fish different ways. Patted the fish dry and the batter is thick enough and sticks very well.

No, but the assignment required sources and data, and we were in a rush. I didn’t say he believed it: he just drafted it, and I did a $20/hour professional rewrite which I will take out of his hide, along with the speeding ticket.
That’s how we are cooking our fish (halibut) and fries...in the oven.
Key to success of both is high heat and convection oven. We cook the fish at 400 and the fries at 450. Use a little spray oil (we use olive oil) and kosher salt.
MMMMMM, good. Satisfies the lust for fries w/o cranking up the fry daddy!
Benefit....the spouse and I are both slim, have low cholesterol levels and low blood pressure. Our DR. was very pleased when we went in for our wellness checkup.

Can you at least sit him down and deprogram him? Explain that the limited data he had available was misleading and not representative of the truth. Even though the assignment is over, it’s not too late to help him research the pertinent facts, for his own benefit. His core beliefs are being formed now.

I had lunch today at a neighborhood fry shop. A huge portion of fries, topped with breaded fried scallops, onion rings and a side of cole slaw. If it’s going to kill me, it’s a great way to go. The plate was $14.99 and I’ll wager it’s a dozen times better than Long John Silver’s.
He knows. Tom’s a good FReeper kid, and his core beliefs are small-government. He started out with an “anti-” position on the topic, but then he wasn’t finding data to back it up. Cato Institute didn’t have a statistical paper on the topic. In the 48-hour time frame, we had to go with mass-media, which means pro-regulation, sources.

We only eat the hushpuppies from there. They’re fresh, anyway.
Flounder, tarTAR sauce from Red Lobster, cole slaw from Sea Island, baked tater from Bill Miller’s.
It’s not fresh caught, but it’ll do in a pinch.
