The very best chocolate cake in the world is “Midnight Chocolate cake” made with mayonnaise. It is wonderfully moist and delicious, and you absolutely cannot tell it has mayo in it. It was a favorite during World War II when food was rationed and eggs were scarce. Inventive women figured out how to use the ingredients they COULD acquire to make their favorite recipes. The Mayo substituted for the eggs and butter. I have never had a chocolate cake to equal the old Midnight recipe.
My BIL brought home “tres leches” cakes a few times. This is not a cake that can be put in the fridge for a while, because it’s sort of a “wet cake”. It’s hard to explain but a fresh one is very very delicious.
