I just want a file I can upload to You Tube and to my web site.You probably already know this but you're better off uploading it to Youtube and embedding the YouTube video than hosting it yourself. With the proliferation of viewing devices it is difficult to code an embedded video to play in everything a viewer may be using. YouTube's embed code is set up to work across most devices.

That simplifies it a lot. You have to assess the trade off of video quality versus bit rate. It might be dictated by youtube, etc.
