Salt/pepper/oil the steaks. Place the steaks on the indirect side, put a piece of wood on the coals, and let the steaks sit in the smoke for 10 minutes.
Then temp the steaks. They'll probably be around 120 degrees. Sear steaks for a few minutes on each side until the temp is where you want (I like 140).
Rest 10 minutes before serving.
