Hi Gina, I'm good. A relaxing weekend, did some yard work today. Did a Pit Beef cook yesterday which turned out good and am having a burger/sausage from Friday tonight. Beautiful weather the last few days.

We’re doing fine after Keith lacerated the front of his knee to the bone on Monday while doing yard work. The doctor put staples in it, like Frankenstein! But, with the antibiotics, it’s been healing very well.
Otherwise, we’ve been very busy. Thankfully, he was still able to do the yard work we do, so we didn’t get behind on any of our jobs because of the cut.
I got us a couple of beef rib eyes for the grill this evening. :-)

Yeah! The last two shows oughta be good!
I’ll look those reverse sear instructions up again (Amazing Ribs site has them, too) and see if Keith wants to try that. It sounds like a good way to get a great, tender steak. These are not very thick though, only about an inch and a quarter.

The steaks are awesome. We decided it was too complicated to do the reverse sear without preparation (pre-dry brine, ect.), so he just did them direct. We’ll try the reverse sear later.
