Having become a fan of sushi in the last 10 years, I now prefer my salmon and tuna raw rather than cooked.
There’s a sushi place I go to where the salmon rolls are like 70% salmon. Delicious! Not like those places where there’s more rice than fish in the roll. So raw I’ll do — but Gollum can keep the “riggling” ones. I don’t like raw tuna much though, texture’s too mushy.
