I used to make fresh Rillettes (pork, goose, duck, chicken, game birds, rabbit and sometime tuna or salmon), along with fresh Mouse, Pate and Foie Gras.

I worked at D’Artagnan in Hudson Valley for 7-8mos, learning that art, plus butchering, truffles, mushrooms and wild game.
