So if this woman had walked into a warehouse she didn't belong in, instead of shoplifting from a store, would it have been appropriate for the police to thrash her like that?

That would be breaking in.

Yeah, in Georgia at least, the Castle Doctrine requires a reasonable fear of attack (death or serious bodily injury) before deadly force can be used.

The reasonableness is dependent on the specific circumstances.

If a woman broke into my home in the daytime, I, as a 6'6" 240 lb man would have a problem using deadly force unless she had a weapon or something.

Now, if the woman starts to grab my 9 y.o. son, bang!

I don’t live in a warehouse, but if she bit my finger and wouldn’t release, she’d probably get hit several times.
