Cook’em until the JUST turn white. Watch your temp and don’t overdue them. I also (sometimes) marinate them with balsamic vinegar and paprika. They don’t taste like your mother’s tuna fish can.

Marinate them 15-20 mins [in whatever marinade that is your personal preference]; sear on grill...4 mins each side...turn only once. We like them pink on the inside.
Blue and yellowfin season is coming up soon. Yummmmmmmmmmmmmm!
