You must fix it with steely reserve.

Lots of garlic cloves tucked under the fat (so it doesn’t burn). As many as you can fit. A handful of coarse kosher salt over the fat.

Middle rack in oven.

500F for 45 minutes. 400F for 45 minutes. Let sit for 10 minutes. Slice horizontally so that each piece has its own level of doneness. The center will be red so that any leftovers can be heated without overcooking.

We have lamb (or goat - its interchangeable) about four or five times a year. No poisonous mint jelly. No thin slices. Chunks.

Be brave, do not flinch - but make sure your oven is clean or your smoke detectors will have a merry time.

Oddly enough, my guinea pigs have a picture of Elsie in theirs. What’s the odds of that, I wonder...

We have a local chain of grocery stores that have the best leg o’lamb I’ve ever had in my life. On two continents.

And they hand slice my beef steaks to 1-3/4” and my pork chops to 1-1/2”. Free of charge. Yummmmm.

when my kids were young they raised guines pigs, but we never thought of them as “legs of lamb”, not enough meat to bother with....or am I missing something....:O)

A little kitty that turned up at my place a few years ago became a barn cat.

When young, it would poke it's paw through small holes in the wall to were the goats where staying at night.

Naturally, this action aroused the goat's curiosity and they'd go over to investigate. They were not happy at having their noses swatted playfully by Tiger, and when I'd feed them, ol' Tiger would strut through THEIR territory as if HE owned the place.

One day Gracie, having had enough, squashed him against the wall, behind a piece of plywood he had dartted behind after tormenting them yet again.

I thought I'd drag out a dead cat; but he was merely dazed.

After that, he would fight me like crazy if I tried to carry him into their area!
