I love it too. We have barbecue “wars” in NC, east vs. west, two very different renditions of the classic pit-cooked pork. I’m an agnostic, lol, love them both, but if my arm was twisted I’d have to give the nod to the east (vinegar and spices) despite having grown up in the west (tomato crept in but still on the vingary side, not sweet).
