Tipping is not a right thing to do.

Tipping is a gracious thing to do.

It is not meritorious.

The wage is meritorious.

A server can work in return for his wages.

His public position might give him more access to gratuity, but they should not be confused with his wages.

I don’t mind giving a gratuity to the chef or the saucier, and leaving the server without if he expects the tip as a wage.

No server works for wages. The nominal wage only exists to cover the taxes on his tips. No one pretends that a server can live on his wage, which is well below minimum wage. Thankfully most people in our society understand this.
