Yoder’s bacon is really good. I opened a can and cooked some of it this morning to add to my polenta. I use part of it and freeze the rest in meal sized portions.

As for polenta, I ground my pop corn and cooked it (like cornmeal mush) and chilled it to use later. Cornmeal mush is poor mans food but polenta is haute cuisine. It will keep you going and poor folks in the depression ate it two meals a day.

Why? Yoder's is upwards of $20 for 9 oz whereas regular bacon is $3 lb.
