Hi Gina, the weekend has been good, a bunch of yard work yesterday and went downtown today for an art festival. Am getting ready to be away on a business trip Tues-Sat.

Got a landscaping quote to do some grading work before the lawn is seeded...11 yards of topsoil for $1,100. After the car problems I'm not excited about spending that. I may try to do it myself with topsoil from Lowes.

Have some leftover steak and cherries jubilee tonight.

How have you been? Anything on the grill?

I thought about your Florida trip and thought it was this past week, but it is still to come. I hope it’s a good one.

That dirt bid is a little steep, although they’re tacking on the tractor work, too, I assume.

If you buy bagged dirt and DIY, watch out for the flimsy top soil. Lately we have noticed some very lame stuff labeled “top soil” from these places like Lowes and Homo Depot, but it has the consistency of saw dust. If it’s does not have a fairly good mixture of sand and “dirt,” then you may not be happy with it.

Are you going to light your cherries jubilee on fire with rum? :-) I bought us a big, thick ribeye that Keith will throw on the grill (one was big enough for us both), and we’ll do white potatoes on the grill, too; plus, I bought some baby portobello mushrooms I’m going to saute’ up in butter for the steak and potatoes.

If you want to amp up those steaks, put some brown butter on them after they rest, right as you serve.

Oh, YUM! I’ll have to try that. Also, what is brown butter? I’ve not heard of that, I don’t think.

Filling in low spots and unevenness is best done with a topsoil that has a good deal of sand in it. Sand is good for leveling, even by itself without other dirt mixed in. But, if you have large areas of dips and pits, trying to do it a bag at a time can be difficult. Maybe get another estimate, if you have time and are able. Check Angie’s List for your area for a good dirt/tractor man, perhaps.

Ah! Keith looked up a recipe to make brown butter, and we now know what it is—carmelized butter, basically.

Take 1/4 to 1/2 stick of butter, cut it up into pieces easy to melt. Turn heat on low. After it melts you can turn the heat up to med. Every so ofter swirl pan around to move the butter. After a few minutes the butter will begin to bubble almost like it’s dish soap. Swirl and watch for the butter to become a golden brown. After lightly golden turn off heat and spoon over steaks, make sure to use the brown toasted fat in the bottom.

I’m wondering if Ed recently ran this Suspense. This is the one with the old strange, cranky guest and the family with the beautiful daughter.

Hope not, there are so many to choose from, not sure why Ed does this occasionally.

Oh, I do remember hearing this Suspense before, not on the Big Broadcast, but it was one that Keith put on a CD for our annual trip to Texas last year. We listened to it as we drove through Louisiana. I remember it...

By the way, Vision, the brown butter on the steak was MMMMdog-delicious!

The flavor of that golden-brown stuff at the bottom was familiar, and though I can’t put my finger on it exactly, it seemed to taste like something that comes with toffee candy.

I made the brown butter perfectly.
