It got very windy. I should get a generator on the house.

How do you do your briskets?

Well, it's a work in progress. If I had to answer I'd say to inject and cook hot and fast. 325, at 160 foil with broth until 203. However, I'm all about Aaron Franklin out of Austin. Have you heard about him? This week I'm experimenting a little to see what happens. I'm going to follow his "butcher paper" recipe and then try something I've been suspecting...

Vision, a generator is a very good thing to have. They can run enough to keep your food from spoiling and a few other things.

I have not heard of Aaron Franklin. I’ll have to look him up.
