Dump the LP gas grill.
Get a Weber kettle.
Layer the grate with charcoal and ignite with starter fluid.
Let burn for about 20 minutes until ready.
Porterhouse Steaks 1-1/4” thick about 5 minutes per side.
Close the top and bottom vents to put the grill out.
Let steaks sit for about 3 minuted before cutting.
Meat is cooked to medium rare to medium. Melt in your mouth perfect.
FWIW Omaha steaks are acceptable as a gift but would not purchase them on my own. Allen Brothers are excellent but pricey.

Do not be afraid of cooking hot or searing) and fairly quick. For thick steaks I have better odds hitting an even medium rare cooking low and slow. That's probably better for the non-professional cook and it gets more smoking that way. The timing required for cooking hot is hard to hit right. 30 seconds too much time and an expensive steak is ruined.

blew the ash of the coals and trew the steak right on the coals. It is a lot of work but really gives a strong smokey taste.

The secret to taste are the mixture of spices. How true,, just coating the meat down with red pepper doesn't make it cajun .. red pepper is just one of many spices and seasonings we use ,, ya have to know the balance.

Charred on the outside sealing in the juices and flavor, blood rare on the inside.
Do you actually know anything about cooking?
Perhaps a nice TV dinner is more fitting for an amateur like you if you are allowed to use the microwave.

Tomorrow is Fathers Day. I will grill up some hobo potatoes with the marinated steak. My daughter will be there for supper .
Hobo potatoes are mixed with onions, green peppers, butter and spices wrapped in tin foil on grill.
I will use my dads recipe for the hobo's on the grill.
