Apple-Bacon Egg Bake

Ingredients:
•3 eggs
•1 small apple, diced
•3/4 cup frozen O'Brien potatoes, thawed
•1/3 cup 2% milk
•1/3 cup sour cream
•1/3 cup shredded cheddar cheese, divided
•3 bacon strips, cooked and crumbled, divided
•Dash salt and pepper

Directions:
•In a small bowl, beat the eggs. Stir in the apple, hash browns, milk, sour cream, 3 tablespoons cheese, 1 tablespoon bacon, salt and pepper.

• Pour into two 2-cup baking dishes coated with cooking spray. Sprinkle with remaining cheese and bacon.

• Bake, uncovered, at 350° for 30-35 minutes or until a knife inserted near the center comes out clean. Yield: 2 servings

I’m taking a second to say “Your holidays are so cute! And your replies are precious!” I copied your chickens to send to my niece in Mississippi as she raises chickens just because she got a wild hair 2 years ago and decided to order some little diddles....LOL!

The first ones she ordered were doing good and they had a pen for them and everything but something (seems a fox) got in there and killed all of them. She was so torn up over it that her husband built her the finest chicken pen/coop anywhere so she could order more. He has a huge dental practice there in town and they can take care of any dental needs but he took the time to build it. Its fabulous and she has plenty of grown chickens now in their own condo and gives away eggs constantly! All of her chickens have names, too!

They were here over New Year’s Eve and we had a big party on New Years Eve at the Mad Greek. That was the night I hit that tire and rim on the highway. I kidded her and told her I always came in with a big bang! We loved having them here but thank goodness, they stayed at my son’s house. Debbie knew I wasn’t able to have company for 3-4 days. She and her hubby are great friends with my son and his wife and cousins, too! Gotta get back to work now! Great thread!

I keep saying that I want some chickens. A couple of years ago, I saw (on the internet) something called a chicken tractor (I think). It was a chicken pen on wheels so it could be moved. I think the pen was lowered when you had it where you wanted it. It interested me because you could move it to different places. Hubby told me that the coyotes would probably get the chickens.

I have several ceramic chickens. I haven’t collected any for a few years.

See ya when you take a break. I may take a break soon since it is lunch time. :)
