Goose liver filling in a donut sounds seriously weird. I’d prefer a savory (or at least non-sweet) pastry for that purpose to the dessert-sweetness of a donut.

Pate foi gras is really good stuff (didn’t believe that until I tried it...). It would make a great savory pastry! Just make sure its a small one - it would have more calories than the sweetest doughnut!
