I keep a small spray bottle with a bleach solution and spray all my knives and cutting boards that i am working with.

I buy 50% hydrogen peroxide and use that for sanitizing. And it is much safer for consumption when added to water for purification.
SSKI, saturated solution potassium iodide is also much safer than chlorine bleach.
