I like those, too. It’s going to be good listening tonight.

I don’t know what kind of mesquite you got, but if it’s the chips, which tend to be very dry, you might like some of this relatively fresh mesqite we have. I could ship you some, if you wanted.

We cut limbs from our trees out in Texas, and then we cut smaller pieces to use for smoking. Initially cutting them in about 3 foot lengths, roughly 4-inches or so in diameter preserves them fairly well throughout the year, and we cut them as needed.

That's kind of you. I've got chunks and haven't tried them yet as I'm told mesquite is an advanced wood, meaning it's a little more difficult to work with. I was thinking of trying my first brisket with it but that may be too ambitious.
