I’m actually trolling for good snack ideas. I hate the idea of maybe a great snack food out there that I am missing out on.

OK, I will play along. I like home-made hummos on lightly heated pita bread. Healthy (poor snack food), but if you add enough garlic you can keep obnoxious neighbors away.

One of the better regional snack foods is boiled peanuts.
They have to be green but fully developed. You have to boil them a long time with lots of salt.
Done right they are really tasty.

I feel that. My $0.02:
I like heavily salted in-shell edamame. Nuke or boil.
Hummus with broccoli, cauliflower, celery or the like. I prefer a spicy hummus. Add sriracha if you can't find one COTS.
An interesting snack I saw Rick Bayless have in Mexico was a cheese crisp. Sprinkle shredded cheese on a medium hot skillet. Cook until it gets crispy. Pull it off and break of pieces of crispy delicious cheese. Mmm.
