Things may not always work better when there's a toasty warm server in a closet in your building, but at least you have a chance of dealing with it.

When you put your company business 'in the cloud', you pays your money, you takes your chances.

They SHOULD be able to restore the lost mailbox from a backup.

If they can’t, fire them and host your own email, because they are useless to you if they can’t do something as trivial as a mailbox restoration.
