Those bakers work SO HARD for that perfect texture.
I bake my own breads and bake for friends.
Mostly lean breads just flour, water, salt and yeast and an enriched potato bread containing flour, water, mashed potatoes, sugar, salt, and yeast. These breads freeze well. The frozen and properly thawed breads are hard to tell from the fresh bread.
