To record the whole thing, the cameraman would need to follow the object in his own rocket. Cameramen don't earn enough to swing that. A stationary shot allows the viewer to watch the trajectory develop and also estimate the altitude and relative velocity of the object. Plenty of information for even the truthiest of truthers, if we're interested enough.
