Actually charcoal is for Haitians and other backyard novices.Did you see any charcoal in those 2 pics?
If you smoke a good steak, or grill it on charcoal, you might as well feed it to the dog.

I would agree. My steaks are grilled on this:
at 700 degrees over lump hardwood charcoal - takes about 6 1/2 minutes. Feeding one of them to a dog would warrant consigning you to hell for all eternity.

I’m usually around 450-ish for a steak. 300-350 for slower-cooking meats, with indirect heat.
Still learning the art of charcoal, and I intend to practice for the next 3 or 4 decades (or until I drop dead, whichever comes first).
