That sounds delicious. When I try it I’m going to add some mushrooms sauteed in olive oil, garlic and then simmered in a little white wine. I also like big chunks of garlic and onions in my pot roast :)
Garlic and onion—sounds like we do the same kind of cooking. My family loves the aroma of those two sauteeing! Your combo sounds good—just remember mushrooms soak up liquid. I tend to dice up the onion and celery finely because then my kids don’t notice it as much and eat it (unknowingly). LOL.
