Cabrito is only served in the spring most places, because that is when most goat kids are born. Also, if the goats are are multi-purpose-dairy goats for organic goats’ milk and cheese, fancy goats to keep the grass short and be living lawn ornaments, or wool producing goats, like the Angoras some of my family raises, the only kids that are going to be sacrificed for food are the culls-the prime kids, like lambs are worth more on the hoof than on the grill.
