Maybe it is a Texas thing, but what on earth is “pulled pork”-dolphin safe or otherwise?

You don’t know what pulled pork is?

It’s the crab cake of barbecue ribs.

Meaning: you get someone else to do the work of picking the meat off the bones.

Outside of Texas, barbecue is pork hind cuts (Boston butt.) After cooking, it is removed from the bone by hand in small chunks, rather than sliced off with a knife. Hence the name “pulled pork.” Of course in Texas, barbecue, as you know is almost always sliced or chopped beef brisket.
