In other words, a New York City hotdog. I never saw the big deal about eating offal.

Brains are really good. My current love is pigs brains.

Very, very slight livery taste, the texture of a very firm tofu. Plain and simple, thaw, dredge in flour, fry in butter over medium heat.

Bottom line, if you like chicken livers, you’ll LOVE pig brains.
