I’ve heard of people who actually put their coffee in water(?), but that makes it harder to eat right from the pocket as you ride.
Dry is better, (less mess) and the wind will carry off any dribbles as just more road dust.
Nothing like chewing a cheek full of seriously good coffee while carving the turns on a seriously decent bike, the snarl of the pipes, and the throb of the engine matching the pounding of your heartbeat on a caffeine rush!
