If my feet are inbounds, but I am leaning out of bounds and catch the ball before it hits the ground then it is a fair catch. So the clock stops when the ball hits the ground. If I am on the kicking team and the ball hits on the one yard line, and bounces in the air across the goal line. I can dive for it and bat it back into the open field before it, or I touch the ground. It then is marked where it hits in the open field and stops, or where someone touches it.
