Many of Richard's Specialty cuts are ripe for the picking, and have gotten excellent covers (the Everly Brothers did Lucille in the early sixties.) None (of the covers) that I've heard have been better than the originals. Compare Richard's and Elvis' Reddy Teddy, and you'll ask, what happened to the swing in Presley's version?

Keep A Knockin’ was a cover. A very good update. But the song had been recorded by Louis Jordon in the 1940s and went as far back as the mid-20s.
