Basil Poledouris' "Conan the Barbarian" film score is my favorite of all time. It tells a complete story in music. It's also been used in dozens of trailers and temp tracks since.

I don't see how you could leave out John Williams body of work or Danny Elfman's.

As far as pop soundtrack's go, "Goodfellas" is pretty solid too.
