I just got rejected as a bartender mainly because the owner couldn't convince the girls to take me on and be trained and the owner for one reason didn't think I could handle it.
I might be wrong, but if the owner approves isn't it the job of the employees to take me on irrespective of their own personal wishes? Another example of the employees run the business instead of the owner.
I feel bitter because it was all going so smoothly and now this. He wanted to take me on, he approved, and now this.

You either have never worked before or you have been spending your time in a school dorm room ( or your mother’s basement?). Part of working is being able to fit into the team ( unless you of course are self employed). Some times it is just not a good match and has nothing to do with skill levels or anything else.
Keep looking because there are jobs available. If you want to be a bar tender go to bar tending school ( yes there are such things) or take some hospitality and restaurant management classes. Just because you want a job doesn’t mean you get one.Perhaps you need to be more open or less open, more friendly or less friendly,less accent or more accent, any of a dozen things. Ask the boss what the other employees didn’t like about you so you can work on those things to make it more likely you will get a job next time around.
Actually if he is an active AA member he would be most likely to be the most reliable bar tender you have. If you mean he has fallen off the wagon and is drinking again, well then he is like a dozen or more bar tenders that I know

He bowed to the wishes of his waitresses? Maybe he’s tapping one or more of them, and didn’t want to spoil his good times by going against their wishes.
The words that stuck out are take me on and be trained. Generally speaking bartenders don't want to train others. In doing so, they are being asked to slow down, teach you what they know, and lose money in the process. There are plenty of bartenders out there who don't need that training and won't negatively affect the other bartenders if they were hired.
It's your job to train for the position, not other employees who will almost certainly lose a tip or two training you. It's inevitable, since training takes time and time is of the essence in bartending.
The fact that he does listen to them points to the fact that his team behind the bar is successful and he doesn't want to mess that up.
Certainly, you wouldn't want to learn at someone else's expense, would you?

Ultimately, of course, it is the boss' decision. If he really wants you there, you'll be there. If he doesn't, you won't be.
My suggestion to you, from someone who bartended their way through college is this:
If you really want to be a bartender, get a job either waiting tables or busing in a bar and learn from there. In a few months, after learning by observation, ask for a shift during off-hours. That's how most people do it - they aren't just dropped into the job.

Again: He's the boss, it is his prerogative to use any criteria he likes for new hires, including that you mesh with the other employees. There is nothing new or earth shattering there at all.
That being said... I would never, ever, publicly blame my employees for a hiring decision that's ultimately mine - even if they were the real reason. Thoroughly unprofessional and completely incompetent, terrible manager, poor decision maker. Consider how'll you'd feel if you work for this person and they throw you under the bus like that.
Be glad you don't work there. This is for the best.
