Here’s how I made it, Polly:
Chicken Fried Steak
2 beef cube steaks (about 1/4 lb. each)
4 T. Dale’s seak seasoning (Available at Wal-Mart)
2 t. crushed garlic (from jar)
1 egg
3 T. water
1 c. Tempura Mix (I used 3/4 c. flour, 1/4 c. cornstarch)
1 1/2 c. PANKO (Japanese bread crumbs)
Oil for frying (about 4 - 6 T.)
Cover steaks with Dale’s steak seasoning, then brush crushed garlic on both sides. Let stand one hour.
Put Tempura mix (or flour mixture) in one bowl (or dish with wide base), egg and water mixed well in another bowl, and bread crumbs in another bowl.
Dip each steak (one at a time, both sides) into flour mixture first, then in egg wash, then in PANKO. (Use no other bread crumbs - PANKO is the very best.)
Brown in pre-heated oil. Make white cream gravy while steaks are browning. Serve immediately, with a strip of gravy accross the center of the steak.
