I converted one room in our basement to a type of root cellar/pantry. The only window in the room is occupied by a window air-conditioner. It is kept cool and dry. I keep them in there, along with root veggies, winter squash, etc...
I have a similar room in the basement where I store canned and paper goods. It has no window, and a dehumidifier keeps it dry. It does get a bit warmer on occasion than I would like it to though.
I may look into keeping “roots” there.
