Is there a special observance, like eating grasshoppers?

Yes, but I think it's something like drinking Finnish wine. I'd have to look it up.

St. Urho is the Patron Saint of Finland. It is said St. Urho drove a plague of grasshoppers from the vineyards of Finland by the power of the Finnish language. An appropriate menu for St. Urho's Day would include green beer, representing the grasshoppers and purple grape juice or wine, representing the vineyards. St. Urho is honored with an unusual statue in Minnesota where there is also an annual St. Urho's Day Cook-off.
