Thanks. dad still trying to clean up from Gustave in Louisiana. grandmother here spent a week in the hospital after Ike. Couldn't breath, asthma attack, fluid in lungs, needed pacemaker. she's home but real weak and mom had to go back to school this week.
She has a real heavy, oval pot with lid. On top of the stove heat it with a little olive oil in it. We use a flat shoulder roast that we make a trip to Food Town on Eldridge (I think that is near you) to get. Salt, pepper, onion powder and garlic powder on every side. when oil in real hot brown the roast on all SIX sides using two long forks.
Add one chopped onion and one cup of water and cook 1 hour on 350. Turn over for another hour. Lift out, add potato, carrots and another onion, replace roast on top and add enough water to come about half way up the roast. Cook a 3rd hour.
The next day we chop up what's left and add rice and eat with hot rolls as a hash. Or as sandwiches, if any of the meat is left.
I wish we could find larger than 3.5 pound roast there.
