You right. Caribou tastes like chicken! On the whole I've enjoyed moose burgers more.

A few years ago my brother made caribou stew. I really enjoyed it.

Sure elk's the best, but not many elk in Ak; you learn to eat what you have available. Summer caribou are ok; they get foul around rut, but cows are good all winter.
Everybody where we live shoot a bunch when they come thru. A little bigger than whitetails, but I only get maybe 75 lbs of high quality lean deboned meat from a cow. I'll get over 500-600 lbs from a moose.
In Alaska, rural & urban people all hunt to supplement what you have to buy at store; part of the lifestyle.

An avid deer hunter I know insists that caribou is the tastiest wild game.
I hear you about elk though, I intend to do an elk hunt no later than next year. Bison is also on the list. =:-D
