I love green peppers too but usually just get them for spaghetti sauce or stuffed peppers (when I used to make stuffed peppers) but I love to eat them dipped into ranch dressing. I cannot always eat chocolate although those Hershey bars with almonds are on my counter begging!

Buy the green peppers and eat them fresh for a day or two, then freeze the rest for spagetti sauce. They freeze well just cut up and put in a baggie.
