Very nice. A while back, I made a quick detour through that area. Spent the better part of a day over in Carcassonne but stayed in nearby Mirepiox. A beautiful if somewhat untamed/wild looking part of France. Absolutely wonderful variety of foods and all of it grown, caught or hunted locally. So flavorful and fragrant.
Jane told me their first meal in France was less expensive than their last meal in Spain and absolutely delicious.
With you post about the food there I suspect they ate in the area of Carcassonne too.
