Thanks! I saved that recipe. I had no idea how to do it. I would definitely make the veal stock in advance. It would be convenient for me to make the stock on Thursday afternoon and do the ribs on the weekend. Interesting about the egg shell, isn’t it? By the way I’ve heard people say they don’t use veal because it is mean to baby cows but I learned that those veal calves are the result of the milking industry. The milk cows have to have milk and their calves are then veal. So if anybody consumes milk they are propping up the veal factories, too. Cheers!
