Moody (Crouch, Jr in disguise) used all 3 in “Goblet of Fire.” But you can bet the real Moody knows how to use them as well. I suspect all of the Aurors do.
Potions that have been discussed in previous books tend to end up being used somewhere. Polyjuice potion (several times), wolfsbane (POA), the bezoar (HBP). One potion has come up twice, but not used anywhere yet. The Draught of Living Death was mentioned in the first potions lesson, and Harry made one in his first potions class for Slughorn. People are speculating that it will turn up in the last book, perhaps tied to Dumbledore's death.
I know Dumbledore's death wasn't straightforward. I think it was planned and coordinated between Snape and Dumbledore. But I still think he is dead. I think I'll be mad if it were a trick.
